Vegetable Fried Rice



Ingredients:
  1. Basmati rice : 2 cups
  2. Water : 3 cups
  3. Butter : 2tbsp
  4. Finely chopped ginger : 1 tbsp
  5. Finely chopped garlic : 1 tbsp
  6. Chopped green chilli : ½ tsp
  7. Thinly sliced vegetables (cabbage, carrot, beans) : 1 cup 
  8. Fresh green peas : ¼ cup 
  9. Thinly sliced Baby corn : ¼ cup (optional)
  10. Thinly sliced green bell pepper (capsicum) : 1 
  11. Vinegar : 1 tsp (optional)
  12. Soya sauce : 1 ½ tbsp
  13. Chilli sauce : ½ tbsp
  14. Pepper powder :1 ½ tsp
  15. Sugar : ½ tsp
  16. Chopped Spring onion : ½ cup 
  17. Salt as per taste
  18. Oil : 2 tbsp  
Method:
  • Heat butter in a pan. Fry rice for 2 minutes and cook with 3 cups water and ¼ tsp salt and keep a side.
  • Put oil in a pan. When the oil is hot add ginger, garlic. Green chilli, and vegetables (cabbage, carrot, beans, peas) and saute them for 5 minutes. Then add capsicum, baby corn and saute for 2 minutes. Then add vinegar mix well.
  • Now add the cooked rice and mix.
  • Lastly add soya sauce, chilli sauce, pepper powder. Sugar, salt and spring onion.
  • Mix well and serve hot.
