Tomato Rice (Thakkali Sadam)
- Basmathi rice (or any raw rice) – 1 cup
- Tomato- 3(medium red tomato, 2 puree and 1 chopped)
- Onion - 1
- Mustard seeds – ½ tsp
- Chana dal & urad dal – 1 tsp each
- Bay leaves, cloves, cardamoms, cinnamon stick – 1 (optional)
- Cumin seeds – 1 tsp
- Fennel seeds - ½ tsp
- Finally chopped Ginger & garlic – 1 tsp
- Chilli powder – 1 tsp or according to your taste
- Turmeric powder – ¼ tsp
- Sugar – ¼ tsp
- Hing – a pinch
- Coriander leaves
- Curry leaves - few
- Salt to taste
- Oil – 4 tsp
- Cook the rice and keep a side.
- Heat oil in a vessel, add mustard seeds, chana dal, urad dal, cumin seeds, bay leaves, cloves, cardamoms, cinnamon, fennel seeds and hing and stir fry for 30 secs.
- Add the sliced onion, ginger, garlic and curry leaves sauté till onion becomes soft.
- Add turmeric powder, red chilli powder, sugar and salt and mix well.
- Add chopped tomato and tomato puree and mix well. Cook for 5 mts on medium flame.
- Add cooked rice, mix and cook covered for 3 mts. Garnish with coriander leaves.
